This recipe was a life changing recipe for us when we originally made in back in 2011.

And still to this day these protein thin mints are a top made recipe here in our house.

We wanted to address some of the questions we received :

Lucy asked – Do you heat the coconut oil first?

Yes. It is best to have the coconut oil in liquid form. Remember to slowly add it in.

She also asked – are you both vegetarian???

No. Our diet now is pretty much open to most foods.

Julie asked –Is hemp protein candida friendly?

We believe it sinceit is a protein source and not a really a carb source.

Erika asked –How many would be a serving?

For us we normally have two.

Healthy thin mint recipe. High in protein. Paleo friendly. Vegan.

A few things about the ingredients we used:

Raw cacao –

  • pure no sugar added
  • good source of magnesium and fiber
  • antioxidants
  • improves circulation
  • helps improve mood

Coconut oil –

  • great source of lauric acid
  • energy – easy to digest
  • boost metabolism

Hemp protein –

  • protein – builds muscle to burn fat
  • fiber
  • omegas

On the original recipe we provided 5 different versions.

We made two here today – one with mesquite and one without.

Print Recipe

The only thin mint recipe you will need. High in protein. Low in sugar.Gluten-free thin mint cookies that are raw and vegan! Protein thin mint cookies that are sweetened with stevia!

  • Prep Time: 5 minutes
  • Total Time: 5 minutes

Ingredients

Scale

  • 3/4 cup hemp protein powder
  • 1/2 cup cocoa
  • 1 tsp peppermint extract or a drops of peppermint essential oil
  • 1/2 tsp liquid stevia
  • 78 tbsp coconut oil, liquid

Instructions

  1. Place all ingredients into a bowl and stir together.
  2. Scoop onto a plastic container.
  3. Then set in fridge or freezer to set.
  4. Keep refrigerator or store in freezer.

Nutrition

  • Serving Size: makes 8 -10 cookies

So good!
No stevia for me so I made these with maple syrup. I also used carob instead of cocoa.
I always loved my girl scout thin mints so these are an excellent treat! Plus my husband passes on the mint/chocolate combo so I don’t have to share. Maybe I will make him the variation with almond extract…

Ive never ever used protein powder. What can replace it? Or is it a must in these cookies?
I have all the other ingredients.

not really sure what is the best replacement for protein powder in this recipe, you could try using carob or mesquite flour or almond flour (not sure how it would do)

Hey!
I didn’t have hemp protein powder at home either so I tried 1/4 of a cup of Great lakes Collagen and 1/2 of a cup of almond flour with 8 tbs of coconut oil. This was my first time making the recipe so I don’t have much to compare it to but I thought that they turned out AWESOME!!! Great texture and taste! Hope that helps!

Well, it’s confirmed – I’m Miss Recipe Botcher. How could I mess something as simple as this up? XD Only me! 😛 I made two mistakes:

1) I used a very old liquid SweetLeaf stevia that was kind of white-y. I don’t know why, but it was really concentrated and even though I used the right amount it sweetened way too much.

2) I used the amount for peppermint extract but with the DoTerra essential oil instead, so it’s way too minty.

I have them in the freezer right now. I’m both looking forward to and fearing trying them, lol.

I’m excited to try these, but I think I did something wrong. My batter was really runny and medium brown instead of dark like your photos. In the freezer now, but I was hoping for some insight?

I’m confused- if you scoop all of the mixed batter into a plastic container and chill- you would have a big chilled ball, not thin cookies. Do you form the cookies after they have chilled?

You scoop the cookies using a cookie or ice cream scooper, place on a tray or plate to set in freezer or fridge.

start with 3 drops and taste. And add more if desired.
